I have orderd me some Isomalt. This is a different kind of sugar that can be used of things like sugar puling. The isomalt does not turn brown when heated, you can color it with food colouring, and if you are really good (i am not yet) you can shape the sugar when it is still hot. I have worked with it before, but more for the simple stuff, filling a mould.
I ordered a new, cheaper brand and i have every intention to play around with it. I know that if i want to go in the real sugar pulling i need special gloves among other things.
