Preperations.

Let me tell you a little secret, on how do the preperations for my cakes. I try to make the preperations for a cake at least 2 week in advance. No this does not seem like a major secret, but it is! Let met tell you why: I see a lot of cake artist, esp the hobby bakers who make the preperations one of two days in advance. This feels to me as if you are making things very difficult on yourself. When you start a couple of weeks in advance, your stuff has plenty of time to harden, you have time to go that extra mile on your preps and, if someting does happen, you have plenty of time to repair of re-do it.

It is always very handy to have buttercream in your freezer, or some flowers, like roses (who are a very populair choosen flower) on for hand.

For me the, going the extra mile part, does the trick. I love to go all out with all my cakes. I am OCD withe details and every single prep needs to look as i have it in my head, i will not settle for less.
